Merry Pancake Day!

This Tuesday is Pancake Day! Every child's favourite day, when you basically get to eat pudding for your evening meal!

Like most children, I absolutely loved Pancake Day as a child. Then I grew up and realised I can make pancakes any time I flippin' well like! (Do you see what I did there? 😉)

So now I have pancakes whenever I can actually be bothered to cook something for breakfast (not often to be fair), but that's not gonna stop me ritualistically having them for dinner on Pancake Day (the most sacred of days) as if the house would implode if we dared eat anything else.

Here in the UK we tend to make flat pancakes or "crepes", but we also have fluffy pancakes - we're very cultured you see. Below is a recipe for each (vegan, of course) for you to try out. 🥞 Vegan Spiced Banana Fluffy Pancakes 🥞
For this you'll need:
  • 240ml unsweetened almond milk
  • 2 tbsp oil of choice
  • 200g all purpose flour
  • 1 medium-sized over-ripe banana
  • 2 tbsp sugar or sugar substitute
  • 1 tbsp baking powder
  • 1/4 tsp bicarb
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
1) Mash up the banana and beat it with the oil and milk. 2) Sieve the dry ingredients into a bowl and mix them together. 3) Add the milk mixture gradually, stirring as you go along. 4) When you have a smooth batter, pop it in the fridge to rest for half an hour. When you're ready, heat up a frying pan and get cooking! As this is a fluffy pancake recipe, you'll only want to spoon about a ladle-full of mixture into the pan at a time. Enjoy with your topping choice!
Pro-tip: For chocolately pancakes, substitute about 40g of the flour for cocoa powder! Or more... or less! Experiment!

🥞 Vegan Crepes 🥞
For this you'll need:
  • 410ml almond milk
  • 220g all purpose flour
  • 2 tbsp oil of choice
  • 1 tsp vanilla extract (optional)
  • 1 tbsp sugar or sugar substitute
1) Mix together the wet ingredients. 2) Sieve the dry ingredients into a bowl. 3) Add the milk mixture gradually, stirring as you go along. 4) When you have a smooth batter, pop it in the fridge to rest for half an hour. When you're ready, heat up a frying pan and get cooking! Pour the batter into the pan this time - just enough to spread over the whole pan as thinly as possible. Serve with your choice of topping (I recommend lemon juice and sugar)! If you plan to have a savoury topping, just leave out the sugar and vanilla extract when you're making the recipe.
